Ingredients

  • 1 pound Ground beef
  • 2 tablespoons Coconut oil
  • 1 medium, chopped Onion
  • 3 minced Garlic cloves
  • 1 inch, grated Ginger
  • 2 teaspoons Ground cumin
  • 2 teaspoons Ground coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut aminos
  • 1 medium, peeled and grated Sweet potato
  • 0.5 cup Coconut flour
  • 0.25 cup Arrowroot flour
  • 0.5 cup Almond flour
  • 1 large Egg
  • 0.5 cup Water

Directions

Step 1

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 2

Add minced garlic and grated ginger, and sauté for another minute until fragrant.

Step 3

Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 7-10 minutes.

Step 4

Stir in ground cumin, ground coriander, turmeric, salt, and black pepper. Mix well to combine.

Step 5

Add coconut aminos and grated sweet potato to the beef mixture. Cook for 5 minutes until the sweet potato is tender. Remove from heat and let it cool.

Step 6

For the dough, combine coconut flour, arrowroot flour, and almond flour in a large bowl.

Step 7

In a separate bowl, beat the egg and mix with 0.5 cup water.

Step 8

Gradually add the wet mixture to the dry ingredients, mixing until a dough forms.

Divide the dough into 12 equal balls. Roll each ball between two sheets of parchment paper into a 4-inch circle.

Step 10

Place a heaping tablespoon of the beef filling onto one half of each circle, fold over the dough and seal the edges by pressing with a fork.

Step 11

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 12

Place samosas onto the baking sheet and brush lightly with remaining coconut oil.

Step 13

Bake in the preheated oven for 20-25 minutes, or until golden brown.
