  • 1 pound Ground beef
  • 1 medium head Cauliflower
  • 3 tablespoons Coconut aminos
  • 1 teaspoon Ginger
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 large Carrot
  • 3 units Green onions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 units Napa cabbage leaves

Directions

Step 1

Begin by preparing the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until the texture resembles rice.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the cauliflower rice, season with a pinch of salt, and sauté for about 5-7 minutes until tender. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining olive oil. Mince the garlic cloves and chop the ginger, then add them to the skillet. Sauté for about 1 minute until fragrant.

Step 4

Add ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 8-10 minutes.

Peel and shred the carrot, and chop the green onions. Add them to the beef, mixing well.
