Ingredients

  • 500 grams Ground beef (grass-fed)
  • 12 sheets Rice paper sheets
  • 60 ml Coconut aminos
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic cloves, minced
  • 2 stalks Green onions, chopped
  • 2 tablespoons Fresh lime juice
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 30 grams Fresh cilantro leaves
  • 2 tablespoons Avocado oil
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large skillet over medium heat, add 2 tablespoons of avocado oil.

Step 2

Once hot, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

Step 3

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through, about 8-10 minutes.

Step 4

Stir in the coconut aminos, sea salt, and black pepper. Cook for another 2-3 minutes until the liquid is mostly absorbed and the beef is well seasoned. Remove from the heat and stir in the chopped green onions. Set aside.

Step 5

To prepare the rice paper rolls, fill a large shallow dish with warm water. Immerse one rice paper sheet in the water for about 10-20 seconds until it softens. Carefully remove it and lay it on a clean surface.

Step 6

Place approximately 2-3 tablespoons of the beef mixture, some julienned carrot and cucumber, and a few cilantro leaves at the lower third of the rice paper.

Step 7

Fold the bottom of the rice paper over the filling, then fold in the sides, and continue rolling tightly to the top. Repeat with the remaining rice paper sheets and filling.

Step 8

Arrange the beef rice noodle rolls on a serving platter. Serve with fresh lime wedges for squeezing over the rolls.
