Ingredients

  • 2 tablespoons olive oil
  • 1 medium, finely chopped yellow onion
  • 4 minced garlic cloves
  • 1 medium, diced green bell pepper
  • 1 medium, diced red bell pepper
  • 1 large, peeled and diced carrot
  • 2 diced celery stalk
  • 500 grams ground beef
  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 sliced, for serving avocado
  • 0.25 cup, chopped, for garnish fresh cilantro
  • 1 for serving lime wedges

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.

Step 2

Add the minced garlic and cook for another minute until fragrant.

Step 3

Stir in the diced green and red bell peppers, carrot, and celery. Cook for 5-7 minutes until the vegetables begin to soften.

Step 4

Increase the heat to medium-high and add the ground beef to the pot. Cook, breaking it up with a spoon, until browned, about 8 minutes.

Step 5

Stir in the canned diced tomatoes, tomato paste, and beef broth. Mix well to combine.

Step 6

Add the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Stir to distribute the spices evenly.

Step 7

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally.

Step 8

Adjust seasoning with additional salt and pepper if needed, then remove from heat.

Step 9

Serve hot topped with sliced avocado, chopped cilantro, and a squeeze of lime juice.
