  • 2 pounds, peeled and cubed russet potatoes
  • 0.5 cup coconut milk
  • 2 tablespoons ghee

Directions

Step 1

Preheat the oven to 400°F (200°C).

In a large pot, add the peeled and cubed potatoes and cover them with water. Bring to a boil over high heat and cook until tender, about 15 minutes.
