Ingredients

  • 3 pounds beef marrow bones
  • 2 large carrots
  • 3 celery stalks
  • 1 large yellow onion
  • 5 garlic cloves
  • 2 bay leaves
  • 10 black peppercorns
  • 2 tablespoons apple cider vinegar
  • 16 cups water
  • 1 tablespoon sea salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the beef marrow bones on a baking sheet in a single layer and roast them in the oven for 30 minutes, turning them halfway through, until they are browned.

Step 3

While the bones are roasting, roughly chop the carrots, celery stalks, and yellow onion. You don't need to peel them.

Step 4

Once the bones are done roasting, transfer them to a large stockpot.

Step 5

Add the chopped carrots, celery, onion, and garlic cloves to the stockpot.

Step 6

Add the bay leaves, black peppercorns, apple cider vinegar, and sea salt to the pot.

Pour the water over the bones and vegetables, making sure everything is submerged.

Place the pot on the stove and over high heat and bring to a boil. Once boiling, reduce the heat to low.

Simmer the broth gently on low heat for 12-24 hours, skimming off any foam or impurities that rise to the surface.
