Preheat your oven to 400°F (200°C).
Place the beef marrow bones on a baking sheet in a single layer and roast them in the oven for 30 minutes, turning them halfway through, until they are browned.
While the bones are roasting, roughly chop the carrots, celery stalks, and yellow onion. You don't need to peel them.
Once the bones are done roasting, transfer them to a large stockpot.
Add the chopped carrots, celery, onion, and garlic cloves to the stockpot.
Add the bay leaves, black peppercorns, apple cider vinegar, and sea salt to the pot.
Pour the water over the bones and vegetables, making sure everything is submerged.
Place the pot on the stove and over high heat and bring to a boil. Once boiling, reduce the heat to low.
Simmer the broth gently on low heat for 12-24 hours, skimming off any foam or impurities that rise to the surface.
After simmering, carefully strain the broth through a fine-mesh sieve or a cheesecloth-lined colander into a clean pot or large bowl to remove all solids.
Allow the broth to cool at room temperature, then transfer to storage containers and refrigerate. The broth will keep in the fridge for about 5 days or can be frozen for up to 6 months.
Before using, you can skim and discard any solidified fat from the surface of the chilled broth, if desired.
