  • 2 pounds beef chuck roast

  • 5 garlic cloves, minced
  • 3 tablespoons Chipotle peppers in adobo sauce, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 cup beef broth, Whole30 compliant
  • 4 cups cauliflower rice
  • 1 bunch fresh cilantro, chopped
  • 2 avocado, sliced
  • 1 cup sliced radishes
  • 1 cup diced tomatoes
  • 2 cups lettuce, shredded
  • 0 to taste salt and pepper

Directions

Step 1

Season the beef chuck roast with sea salt and black pepper.

Step 2

Heat coconut oil in a large skillet over medium-high heat. Sear the beef on all sides until well browned, about 2-3 minutes per side.
