  • 100 milliliters Ice water
  • 3 tablespoons Tapioca flour
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 1 liter Broth (compliant with Whole30, preferably beef)
  • 2 pieces Shallots, finely sliced
  • 3 stalks Spring onions, chopped
  • 200 grams Chinese cabbage, chopped
  • 2 pieces Carrots, sliced
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Fish sauce (Whole30 compliant)

Directions

Step 1

In a large bowl, combine ground beef, ice water, tapioca flour, minced garlic, salt, and white pepper. Mix thoroughly to form a smooth meat mixture.

Use your hands to shape the meat mixture into small balls, about the size of a golf ball.

Bring a pot of water to a boil. Reduce to a simmer and gently drop the meatballs into the pot. Simmer for 10-15 minutes or until the meatballs float to the surface and are fully cooked. Remove and set aside.

Step 4

In another large pot, add the beef broth and bring it to a boil.

Step 5

Add sliced shallots and cook until they are fragrant.

Step 6

Add the cooked meatballs, sliced carrots, chopped Chinese cabbage, coconut aminos, and fish sauce to the boiling broth.

Step 7

Reduce heat to a simmer and cook for an additional 10 minutes until the vegetables are tender.

Step 8

Adjust seasoning with additional salt and white pepper, if needed.

Step 9

Serve hot, garnished with chopped spring onions.
