Ingredients

  • 2 pounds whole snapper, cleaned and scaled
  • 1 lemon, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Rinse the snapper under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish with a sharp knife.

Step 3

In a small bowl, mix together the olive oil, chopped rosemary, chopped thyme, minced garlic, sea salt, and black pepper.

Step 4

Rub the olive oil and herb mixture all over the snapper, making sure to get some inside the slashes.

Place the lemon slices inside the cavity of the fish and on top of the fish, between each slash.
