Ingredients

  • 1.5 cups Cauliflower florets
  • 1 medium Carrot
  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh cilantro
  • 0.5 cup Almond flour
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground coriander
  • 2 Garlic cloves
  • 0.5 small Red onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 2 tablespoons Fresh lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse cauliflower florets until they resemble rice-like consistency. Transfer to a large mixing bowl.

Step 3

Peel and grate the carrot, then add it to the bowl with the riced cauliflower.

Add the parsley, cilantro, almond flour, ground cumin, ground coriander, minced garlic, and diced red onion to the bowl. Mix well to combine.
