  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 6 slices bacon
  • 8 large eggs
  • 0.5 cup coconut milk
  • 2 cups spinach
  • 1 medium red bell pepper
  • 0.5 cup onion
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and thinly slice the sweet potatoes into rounds about 1/8 inch thick.

Step 3

Grease a 9-inch pie dish with 1 tablespoon of olive oil. Line the bottom and sides of the dish with the sweet potato slices, overlapping them slightly to form a crust. Drizzle the remaining olive oil over the sweet potatoes and season lightly with salt and pepper.

Bake the sweet potato crust in the preheated oven for 20 minutes, or until the edges are golden and the potatoes are tender. Reduce the oven temperature to 350°F (175°C).
