Ingredients

  • 8 large eggs
  • 0.25 cup coconut milk
  • 4 slices nitrate-free bacon
  • 1 cup fresh spinach
  • 0.5 cup red bell pepper
  • 2 sliced green onion

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly grease a standard 12-cup muffin tin with olive oil or ghee to prevent sticking.

In a medium skillet over medium heat, cook the bacon slices until crispy. Remove and place them on a paper towel-lined plate to drain. Once cool, chop into small pieces.
