Ingredients

  • 4 slices Whole30-compliant bacon
  • 4 pieces Large eggs
  • 2 tablespoons Almond milk
  • 1 medium Avocado
  • 1 cup Baby spinach
  • 2 teaspoons Coconut oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 leaves Large leafy greens (such as Swiss chard or collard greens)

Directions

Step 1

Preheat a skillet over medium heat. Add the bacon slices and cook until crispy, about 4-5 minutes per side. Once cooked, drain on a paper towel and set aside.

Step 2

In a bowl, whisk together the eggs, almond milk, salt, and black pepper until well combined.

Step 3

In the same skillet, after removing the bacon, add 1 teaspoon of coconut oil. Reduce the heat to low and pour in the egg mixture. Let it cook slowly, stirring occasionally to create soft, scrambled eggs. Once cooked, remove from heat.

Peel and slice the avocado flesh into thin strips.

In another small skillet, add the remaining teaspoon of coconut oil and sauté the baby spinach briefly until just wilted, about 1-2 minutes.
