Ingredients

  • 500 g boneless chicken thighs
  • 1 tbsp ground turmeric
  • 3 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tbsp coconut aminos
  • 1 tsp fish sauce
  • 3 tbsp coconut oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 2 lime wedges
  • 2 tbsp coriander leaves, chopped

Directions

Step 1

Cut the boneless chicken thighs into bite-sized pieces and set aside in a large bowl.

Step 2

In the bowl with the chicken, add ground turmeric, minced garlic, minced ginger, coconut aminos, fish sauce, sea salt, and black pepper. Mix thoroughly to coat the chicken evenly in the marinade spices.

Step 3

Cover the bowl with the marinated chicken and let it rest for at least 30 minutes in the refrigerator. For enhanced flavor, you can marinate it for up to 2 hours.

Step 4

In a large frying pan, heat coconut oil over medium-high heat until hot.

Step 5

Add the marinated chicken pieces to the pan, ensuring they are spread out in a single layer. Do this in batches if necessary to avoid overcrowding, which can prevent the chicken from crisping up correctly.

Step 6

Fry the chicken on each side for approximately 7-8 minutes, or until golden brown and cooked through. The internal temperature should reach at least 165°F (75°C).

Step 7

Once cooked, remove the chicken from the pan and place it on a plate lined with paper towels to drain any excess oil.

Step 8

Serve hot, garnished with freshly chopped coriander leaves and lime wedges on the side for squeezing over the chicken before eating.
