Ingredients

  • 4 pieces Chicken thighs
  • 2 tablespoons Coconut aminos
  • 1 whole Lemon
  • 0.5 cup Coconut milk
  • 4 whole Shallots
  • 6 whole Garlic cloves
  • 1 inch Ginger
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Turmeric powder
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Coconut oil
  • 1 inch Fresh turmeric root (optional)

Directions

Step 1

Squeeze the juice of one lemon into a bowl, then add in the coconut aminos and coconut milk, mixing well.

Step 2

Peel and roughly chop the shallots, garlic, ginger, and fresh turmeric root (if using). Add them to a food processor and blend until you have a smooth paste.

Step 3

In a large bowl, combine the spice paste with the ground coriander, ground cumin, turmeric powder, cayenne pepper, salt, and black pepper. Mix well to create a thick marinade.

Step 4

Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated in the marinade. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

Step 5

When ready to cook, heat the coconut oil in a deep frying pan over medium heat until hot.

Step 6

Carefully add the marinated chicken thighs to the hot oil, skin side down, and fry for 5-7 minutes per side until golden brown and fully cooked through. Make sure to maintain the oil temperature so that the chicken cooks evenly without burning.

Step 7

Once cooked, remove the chicken from the oil and place it on a wire rack or a plate lined with paper towels to drain excess oil.

Step 8

Serve the Ayam Goreng Berempah hot, garnished with any extra fresh herbs you like, such as cilantro or sliced green onions.
