Ingredients

  • 1 large sweet potato
  • 1 large avocado
  • 0.5 lemon
  • 6 cherry tomatoes

  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro
  • 1 teaspoon extra virgin olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C).

Wash and dry the sweet potato. Slice it lengthwise into 1/4 inch thick slices.

Place the sweet potato slices on a baking sheet. Brush lightly with extra virgin olive oil on both sides.
