Ingredients

  • 2.5 cups almond flour
  • 1.5 cups tapioca starch
  • 0.5 cups coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 tablespoons apple cider vinegar
  • 1.25 cups warm water
  • 1 large egg
  • 1 egg yolk
  • 2 tablespoons avocado oil
  • 0.33 cup baking soda (for boiling)
  • 4 cups boiling water

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, tapioca starch, coconut flour, baking soda, and sea salt until well combined.

Step 3

In a separate bowl, mix the apple cider vinegar, warm water, 1 egg, and avocado oil. Whisk until a consistent mixture is achieved.

Step 4

Slowly add the wet ingredients to the dry ingredients, stirring until a dough forms. The dough should be smooth and slightly sticky.

Step 5

Divide the dough into eight equal portions. Roll each portion into a long rope, around 18 inches in length. Shape each rope into a pretzel by forming a U-shape and twisting the ends over each other.

Step 6

In a medium saucepan, bring the 4 cups of water to a boil. Add the 0.33 cup of baking soda to the boiling water.

Step 7

Gently place each pretzel into the boiling water for about 30 seconds. Use a slotted spoon to remove them and place each one on the prepared baking sheet.

Step 8

Brush the pretzels with the beaten egg yolk to give them a golden brown color after baking.

Step 9

Sprinkle additional sea salt over the top of the pretzels, if desired.

Step 10

Bake the pretzels in the preheated oven for 15-20 minutes or until they turn golden brown.

Step 11

Remove the pretzels from the oven and let them cool on a wire rack for a few minutes before serving.

Step 12

Enjoy your Whole30 compliant German pretzels fresh from the oven!
