Ingredients

  • 4 pieces Beef short ribs
  • 4 pieces Chicken thighs, bone-in, skin-on
  • 0.5 cup Olive oil
  • 0.25 cup Red wine vinegar
  • 0.5 cup Fresh parsley, chopped
  • 2 tablespoons Fresh oregano, chopped
  • 4 Garlic cloves, minced
  • 1 teaspoon Red pepper flakes
  • 2 teaspoons Sea salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 Lemon, juiced

Directions

Step 1

Prepare the chimichurri sauce: In a bowl, combine the olive oil, red wine vinegar, chopped parsley, chopped oregano, minced garlic, red pepper flakes, and salt and black pepper. Stir in the lemon juice. Let it sit at room temperature to blend flavors.

Pat the beef short ribs and chicken thighs dry with paper towels and season both generously with 1 teaspoon of sea salt each.
