Peel the yuca roots and cut them into 3-inch chunks. Rinse them under cold water to remove any dirt or debris.
Place the yuca chunks in a large pot and cover with water. Bring to a boil over medium-high heat and cook for about 15 minutes until they are fork-tender.
Drain the cooked yuca and let it cool slightly. Once cooled, remove any fibrous centers from the chunks.
Mash the cooked yuca in a large bowl using a potato masher or fork, then gradually add in the yuca flour and salt.
Add 1 tablespoon of olive oil and continue kneading until the mixture forms a smooth, pliable dough. If the dough feels too dry, gradually add water, 1 tablespoon at a time, until the consistency is right.
