Ingredients

  • 2 lbs fresh yuca (cassava) roots
  • 1 cup yuca flour
  • 1 tsp sea salt
  • 2 tbsp olive oil
  • 1 cup water

Directions

Step 1

Peel the yuca roots and cut them into 3-inch chunks. Rinse them under cold water to remove any dirt or debris.

Place the yuca chunks in a large pot and cover with water. Bring to a boil over medium-high heat and cook for about 15 minutes until they are fork-tender.

Drain the cooked yuca and let it cool slightly. Once cooled, remove any fibrous centers from the chunks.

Mash the cooked yuca in a large bowl using a potato masher or fork, then gradually add in the yuca flour and salt.
