Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Applesauce (unsweetened)
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Medjool dates, pitted and chopped
  • 1 medium Apple, peeled and diced
  • 0.25 cup Chopped walnuts (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a muffin tin with 12 parchment paper muffin liners.

Step 2

In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.

In a separate medium bowl, whisk the eggs until frothy. Stir in the applesauce, melted coconut oil, and vanilla extract.
