  • 1 large Onion
  • 1 inch piece, grated Ginger
  • 3 minced Garlic cloves
  • 2 small Tomato
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Kashmiri red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 1 cup Water
  • 0.25 cup, chopped Fresh cilantro

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces. Set aside.

Step 2

Heat coconut oil in a large pan over medium heat.

Step 3

Add mustard seeds and cumin seeds; let them crackle for about 30 seconds.

Step 4

Add the onions and sauté until they turn golden brown, about 5-7 minutes.

Stir in the grated ginger and minced garlic, and cook for another 1-2 minutes until aromatic.
