Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 0.75 cups Whole milk
  • 0.5 cups Unsalted butter, melted
  • 1.5 teaspoons Vanilla extract
  • 0.75 cups White chocolate chips
  • 0.25 cups Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners, or grease the tin lightly with butter or non-stick spray.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs lightly. Add the milk, melted butter, and vanilla extract, whisking until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Fold in the white chocolate chips evenly throughout the batter.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Once the muffins are fully cooled, dust with powdered sugar for a snowy, whiteout effect, if desired.
