Ingredients

  • 750 ml dry white wine
  • 500 ml apple cider
  • 250 ml orange juice
  • 3 tbsp honey
  • 3 sticks cinnamon sticks
  • 8 pieces whole cloves
  • 2 pods star anise
  • 0.5 tsp freshly grated nutmeg
  • 1 strip lemon zest
  • 1 strip orange zest
  • 1 whole sliced orange
  • 60 ml brandy (optional)

Directions

Step 1

In a large saucepan, combine the white wine, apple cider, and orange juice.

Step 2

Add the honey, cinnamon sticks, whole cloves, star anise, grated nutmeg, lemon zest, and orange zest to the saucepan.

Step 3

Set the saucepan over medium heat and gently warm the mixture. Do not let it boil, as this will burn off the alcohol and change the flavor.

Step 4

Once the mixture is hot (but not boiling), lower the heat and let it simmer gently for 15–20 minutes to allow the flavors to meld.

Step 5

Slice the orange into thin rounds, then add the slices to the saucepan in the final 5 minutes of simmering.

Step 6

If using brandy, stir it into the wassail just before serving for an additional layer of flavor.

Step 7

Strain the mixture into a heatproof pitcher or punch bowl to remove the spices and zest.

Step 8

Serve the wassail warm in heatproof mugs or glasses. Garnish each serving with an orange slice or a small cinnamon stick, if desired.
