  • 8 leaves Fresh sage leaves
  • 1 large orange (zested) Orange peel
  • 4 large (smashed) Garlic cloves
  • 2 tablespoons Black peppercorns
  • 3 whole Bay leaves
  • 4 cups Ice cubes

Directions

Step 1

In a large stockpot, combine water, kosher salt, and brown sugar. Heat the mixture over medium heat, stirring occasionally, until the salt and sugar fully dissolve. This should take about 5-7 minutes.

Step 2

Remove the pot from heat and add the white wine, rosemary, thyme, sage leaves, orange peel, smashed garlic cloves, black peppercorns, and bay leaves. Stir to combine.

Allow the brine to cool to room temperature completely. If you need to speed up the process, you can place the pot in an ice bath or refrigerate it until cool.
