Ingredients

  • 400 grams spaghetti
  • 4 tablespoons butter
  • 4 pieces garlic cloves
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped (optional)
  • 1 tablespoon olive oil
  • 4 liters water

Directions

Step 1

Bring 4 liters of water to a boil in a large pot. Add 1 tablespoon of salt to the water, then add the spaghetti. Cook according to the package instructions until al dente (usually 8-10 minutes). Reserve 1 cup of pasta water, then drain the rest and set the spaghetti aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil and 4 tablespoons of butter in a large skillet over medium heat. Once the butter melts, add 4 finely minced garlic cloves and sauté for 1-2 minutes until fragrant.

Step 3

Sprinkle 2 tablespoons of all-purpose flour over the garlic and stir constantly for about 1 minute to create a roux.

Step 4

Slowly pour in 2 cups of milk while whisking continuously to avoid lumps. Once the mixture is smooth, add 1 cup of heavy cream and continue stirring.

Step 5

Reduce the heat to low and let the sauce simmer for 5-7 minutes, stirring occasionally, until it thickens.

Step 6

Stir in 1 cup of grated parmesan cheese and mix until fully melted and incorporated into the sauce. Season with 1 teaspoon of salt and 0.5 teaspoon of black pepper, adjusting to taste if necessary.

Step 7

Add the cooked spaghetti to the skillet and toss well to coat the pasta evenly with the sauce. If the sauce is too thick, use the reserved pasta water to loosen it by adding a few tablespoons at a time until the desired consistency is reached.

Step 8

Remove the skillet from heat and sprinkle 2 tablespoons of chopped parsley over the pasta for a fresh touch (optional).

Step 9

Serve the white spaghetti warm, garnished with additional grated parmesan if desired.
