Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cloves garlic (minced)
  • 3 cups fresh spinach (chopped)
  • 0.5 cups parmesan cheese (grated)
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 0.125 teaspoons ground nutmeg (optional)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Once the butter is melted, add the flour and whisk continuously for about 1-2 minutes to create a roux. Make sure the mixture does not brown.

Step 3

Slowly pour in the milk, whisking constantly to combine with the roux. Continue whisking until the mixture is smooth and begins to thicken, about 3-5 minutes.

Step 4

Lower the heat to medium-low and stir in the minced garlic. Let it cook for 1 minute until fragrant.

Step 5

Add the chopped spinach to the saucepan. Stir gently until the spinach wilts completely, about 2-3 minutes.

Step 6

Mix in the grated parmesan cheese and stir until fully melted and combined.

Step 7

Season the sauce with salt, ground black pepper, and optionally a pinch of ground nutmeg for added depth of flavor.

Step 8

Once the sauce reaches your desired consistency, remove it from the heat. Serve hot over pasta, use it as a sauce for vegetables, or as a filling for baked dishes like lasagna.
