Ingredients

  • 500 grams All-purpose flour
  • 7 grams Instant yeast
  • 25 grams Granulated sugar
  • 10 grams Salt
  • 250 milliliters Whole milk
  • 60 grams Unsalted butter (melted and cooled)
  • 1 Egg
  • 50 milliliters Water (lukewarm)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, instant yeast, granulated sugar, and salt. Mix well with a whisk or spoon to evenly distribute the dry ingredients.

Step 2

In a separate small bowl, whisk together the whole milk, melted butter, egg, and lukewarm water until fully combined.

Step 3

Gradually pour the wet ingredients into the dry mixture and stir using a wooden spoon or spatula until the dough begins to form.

Step 4

Transfer the dough to a lightly floured surface and knead it by hand for 8-10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment for 5-6 minutes on medium speed.

Step 5

Shape the dough into a ball and place it in a lightly greased bowl. Cover the bowl with plastic wrap or a damp kitchen towel and let it rest for 10 minutes.

Step 6

After resting, divide the dough into 12 equal portions (approximately 70 grams each). Shape each portion into a round ball and place them on a parchment-lined baking sheet, spaced slightly apart.

Step 7

Cover the baking sheet loosely with plastic wrap or a kitchen towel and place it in the refrigerator overnight (8-12 hours). This allows the dough to proof slowly and develop flavor.

Step 8

In the morning, remove the buns from the refrigerator and let them sit at room temperature for 30-45 minutes while preheating the oven.

Step 9

Preheat your oven to 190°C (375°F). If desired, brush the tops of the buns with an egg wash (1 egg beaten with 1 tablespoon of water) for a golden finish.

Step 10

Bake the buns in the preheated oven for 18-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.

Step 11

Remove the buns from the oven and let them cool slightly on a wire rack before serving. Enjoy them warm or at room temperature with your favorite spreads or fillings.
