Directions

Step 1

In a medium saucepan, combine the granulated sugar and water, and stir gently to combine. Place over medium heat and let the mixture come to a boil without stirring further. Clip a candy thermometer to the side of the pan to monitor the temperature.

Step 2

Continue to boil the sugar syrup until it reaches 240°F (116°C), also known as the soft-ball stage. This typically takes 5–7 minutes. While waiting, move to the next step to begin preparing the egg whites.

Step 3

In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Using a hand mixer or stand mixer fitted with the whisk attachment, beat the mixture on high speed until soft peaks form.

Step 4

Once the sugar syrup reaches 240°F, remove it from the heat immediately. With the mixer running on medium-low speed, very carefully and slowly drizzle the hot syrup into the beaten egg whites, pouring in a steady stream down the side of the mixing bowl to avoid splattering.

Step 5

Increase the mixer speed to high and beat the frosting until it is thick, glossy, and holds stiff peaks. This process will take about 7–10 minutes. The mixing will also help cool the frosting to room temperature.

Step 6

Add the vanilla extract and mix for an additional 30 seconds to incorporate.

Step 7
