Ingredients

  • 2 cups Fresh spinach
  • 12 ounces Queso blanco (Mexican white cheese)
  • 8 ounces Cream cheese
  • 1 cup Monterey Jack cheese (shredded)
  • 0.5 cup Milk
  • 1 tablespoon Butter
  • 1 Jalapeño pepper (finely chopped)
  • 2 cloves Garlic (minced)
  • 0.5 cup Onion (finely diced)
  • 0.5 teaspoon Cumin powder
  • 0.25 teaspoon Chili powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Wash and chop the fresh spinach into small pieces.

Step 2

In a skillet, melt the butter over medium heat. Add the diced onion and minced garlic and cook until soft and fragrant, about 2-3 minutes.

Step 3

Add the chopped jalapeño pepper to the skillet and cook for another 1-2 minutes, stirring occasionally.

Step 4

Stir in the cumin powder, chili powder, and salt. Mix well to combine the spices with the sautéed vegetables.

Step 5

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove the skillet from heat and set aside.

Step 6

In a medium saucepan over low heat, combine the Queso blanco, cream cheese, and milk. Stir continuously until the cheeses are fully melted and smooth, about 5-7 minutes.

Step 7

Add the shredded Monterey Jack cheese to the saucepan and continue stirring until it melts completely.

Step 8

Fold the cooked spinach mixture into the cheese sauce and stir until everything is well combined.

Step 9

Transfer the dip to a serving bowl and garnish with chopped cilantro.

Step 10

Serve immediately with tortilla chips, bread, or fresh vegetables for dipping.
