Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 1 cups buttermilk
  • 0.5 cups unsalted butter, melted and cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cups fresh strawberries, diced
  • 0.75 cups white chocolate chips
  • 2 tablespoons optional turbinado sugar for topping

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.

Step 2

In a large mixing bowl, sift together the flour, granulated sugar, baking powder, and salt. Set aside.

Step 3

In a separate medium bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until fully combined.

Step 4

Gradually pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should look slightly lumpy.

Step 5

Gently fold in the diced strawberries and white chocolate chips into the batter. Be careful not to crush the strawberries.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each about 3/4 full.

Step 7

If desired, sprinkle a pinch of turbinado sugar on top of each muffin for an extra crunch and sweet finish.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve warm or at room temperature and enjoy your delectable white chocolate strawberry muffins!
