  • 120 ml Whole milk

  • 100 g Dark chocolate (70% cocoa), finely chopped
  • 120 ml Heavy cream (for sauce)
  • 15 g Unsalted butter

Directions

Step 1

In a small bowl, pour the cold water and sprinkle the powdered gelatin evenly on top. Let it sit for 5-10 minutes to bloom.

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.

Remove the saucepan from the heat and stir in the finely chopped white chocolate. Mix until the chocolate has completely melted and the mixture is smooth.

Add the bloomed gelatin to the warm mixture and stir well until the gelatin is fully dissolved.
