Ingredients

  • 115 grams unsalted butter
  • 150 grams brown sugar
  • 50 grams granulated sugar
  • 1 piece large eggs
  • 2 teaspoons vanilla extract
  • 120 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 150 grams rolled oats
  • 150 grams white chocolate chips

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes using a hand or stand mixer.

Step 3

Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.

Step 4

In a separate medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Stir in the rolled oats and white chocolate chips using a spatula or wooden spoon, ensuring they are evenly distributed throughout the dough.

Step 7

Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheets, spacing them about 5 cm (2 inches) apart to allow for spreading.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still appear soft, but they will firm up as the cookies cool.

Step 9

Remove the baking sheets from the oven and let the cookies rest for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy your White Chocolate Oat Cookies with a glass of milk or a hot cup of tea!
