Ingredients

  • 250 grams All-purpose flour
  • 150 grams Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 100 grams Unsalted butter
  • 120 milliliters Milk
  • 120 milliliters Plain yogurt
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 150 grams White chocolate chunks or chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Melt the butter in a small saucepan over low heat or in the microwave, then set it aside to cool slightly.

Step 4

In another bowl, whisk together the milk, yogurt, vanilla extract, and eggs. Once the butter has cooled slightly, whisk it into the wet ingredients until fully combined.

Step 5

Create a well in the center of the dry ingredients, then pour the wet ingredients into the well. Gently fold the mixture together with a spatula or wooden spoon, being careful not to overmix. The batter should be slightly lumpy.

Step 6

Add the white chocolate chunks or chips to the batter and fold them in evenly.

Step 7

Divide the batter evenly among the lined or greased muffin cups, filling each about three-quarters full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.

Step 9

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Enjoy your homemade white chocolate muffins warm or at room temperature. Store in an airtight container for up to 3 days.
