Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 tablespoons Light corn syrup
  • 2 tablespoons Water
  • 0.75 cup Roasted macadamia nuts, chopped
  • 1 cup White chocolate chips
  • 1 teaspoon Sea salt flakes (optional)

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

Step 2

In a heavy-bottomed saucepan, combine unsalted butter, granulated sugar, light corn syrup, and water.

Step 3

Cook over medium heat, stirring constantly with a wooden spoon or spatula until the mixture is melted and smooth.

Step 4

Bring the mixture to a boil and insert a candy thermometer. Cook without stirring until the temperature reaches 300°F (hard crack stage), about 10-15 minutes.

Step 5

Once the toffee reaches 300°F, immediately remove it from the heat and stir in the roasted macadamia nuts quickly.

Step 6

Carefully pour the hot toffee mixture onto the prepared baking sheet, spreading it out evenly with a spatula.

Step 7

While the toffee is still hot, sprinkle the white chocolate chips over the surface. Let sit for 1-2 minutes to allow the chocolate to soften, then spread it evenly with an offset spatula.

Step 8

If using, sprinkle sea salt flakes over the melted chocolate for extra flavor.

Step 9

Let the toffee cool completely at room temperature, about 1 hour, or refrigerate it to speed up the process.

Step 10

Once hardened, break the toffee into pieces and store in an airtight container at room temperature for up to 2 weeks.
