  • 180 grams All-purpose flour
  • 50 grams Granulated sugar
  • 115 grams Unsalted butter, cold and cubed
  • 1 large Egg yolk
  • 30 ml Ice water
  • 200 grams White chocolate chips
  • 120 ml Heavy cream
  • 1 teaspoon Vanilla extract
  • 300 grams Assorted fresh fruits (e.g., berries, kiwi, and mango)
  • 2 tablespoons Apricot jam
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a medium bowl, combine the all-purpose flour and granulated sugar.

Step 3

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Step 4

Add the egg yolk and ice water to the flour mixture, one tablespoon at a time, and mix until the dough comes together. Do not overwork the dough.

Wrap the dough in plastic wrap and refrigerate for 15 minutes.
