Ingredients

  • 2 cups All-purpose flour
  • 1/3 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, chilled and cubed
  • 1/2 cup Heavy cream, plus extra for brushing
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Dried cranberries (craisins)
  • 1/2 cup White chocolate chips

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Pour the wet mixture into the dry ingredients and gently stir until just combined. Be careful not to overmix.

Step 6

Fold in the dried cranberries and white chocolate chips to evenly distribute them throughout the dough.

Step 7

Lightly flour a clean surface and turn the dough out onto it. Gently pat the dough into a circle about 1 inch thick.

Step 8

Cut the dough into 8 equal wedges and transfer them to the prepared baking sheet, spacing the wedges slightly apart.

Step 9

Brush the tops of the scones with a small amount of heavy cream to help them brown beautifully in the oven.

Step 10

Bake for 16–18 minutes, or until the scones are golden brown on top.

Step 11

Allow the scones to cool slightly on the baking sheet before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
