Ingredients

  • 2 cups all-purpose flour
  • 1 cup freeze-dried strawberries
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 0.75 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup white chocolate chips
  • 0.5 cup sweetened condensed milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

Using a food processor or blender, pulse the freeze-dried strawberries into a fine powder. Sift the powdered strawberries into the flour mixture and whisk again to combine.

Step 4

In a large mixing bowl, use a hand mixer or stand mixer to beat the softened butter, granulated sugar, and light brown sugar together until light and fluffy, about 2-3 minutes.

Step 5

Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 7

Gently fold in the white chocolate chips with a rubber spatula.

Step 8

In a small bowl, combine the sweetened condensed milk with a few teaspoons of the strawberry-flavored dry mixture to create a smooth pink fudge filling.

Step 9

Using a spoon, drop a rounded tablespoon of cookie dough onto the prepared baking sheet. Make a small indentation in the center of each dough ball and spoon in about 1/2 teaspoon of the fudge filling.

Step 10

Cover the filling with a small pinch of cookie dough to seal it in. Repeat with the remaining dough and fudge filling, spacing the cookies about 2 inches apart.

Step 11

Bake for 10-12 minutes, or until the edges are just beginning to turn golden. Do not overbake; the centers should remain soft.

Step 12

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 13

Serve and enjoy these delightful white chocolate chip strawberry fudge drop cookies!
