Ingredients

  • 1 cup Unsalted butter
  • 0.5 cup Granulated sugar
  • 0.75 cup Brown sugar, packed
  • 2 Large eggs
  • 2 teaspoons Pure vanilla extract
  • 2.25 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1.5 cups White chocolate chips
  • 1 cup Dried cherries
  • 1 cup Chopped pecans

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Fold in the white chocolate chips, dried cherries, and chopped pecans until evenly distributed.

Step 7

Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden. The centers will still look slightly underbaked—this is perfect for a soft and chewy texture.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 5 days.
