Ingredients

  • 200 grams White chocolate
  • 120 grams Dried apricots
  • 80 grams Desiccated coconut
  • 1 teaspoon Vanilla extract
  • 100 milliliters Sweetened condensed milk
  • 20 grams Butter
  • 2 tablespoons Powdered sugar (optional)
  • 50 grams Additional desiccated coconut (for coating)

Directions

Step 1

Chop the dried apricots into very small pieces or pulse them in a food processor until finely minced. Set aside.

Step 2

In a microwave-safe bowl or using a double boiler, melt the white chocolate until smooth and silky. Be careful not to overheat it.

In a mixing bowl, combine the melted white chocolate, dried apricots, desiccated coconut, vanilla extract, sweetened condensed milk, and butter. If you desire a sweeter truffle, add the optional powdered sugar at this stage and mix well.
