  • 2 4-ounce cans Green chilies (diced, canned)
  • 4 cups Chicken broth
  • 3 15-ounce cans White beans (e.g., cannellini or great northern), drained and rinsed
  • 1 cup Corn (fresh, frozen, or canned)
  • 1 cup Half-and-half
  • 4 ounces Cream cheese, softened
  • 2 tablespoons Cilantro, chopped (optional for garnish)
  • 4 pieces Lime wedges (optional for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with salt and pepper. Add them to the pot and sear for 4-5 minutes on each side until golden brown. Remove and set aside.

In the same pot, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic, cumin, coriander, and oregano, cooking for 1 minute until fragrant.
