Ingredients

  • 2 tablespoons olive oil
  • 1 medium-sized, diced yellow onion
  • 3 minced garlic cloves
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 15-ounce cans, drained and rinsed great Northern beans
  • 2 4-ounce cans, diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground white pepper
  • 4 ounces, softened cream cheese
  • 0.5 cup heavy cream
  • 2 tablespoons, chopped (optional) fresh cilantro
  • 1 optional, cut into wedges for serving lime

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced yellow onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Place the chicken breasts in the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the chicken is fully cooked and easily shreds with a fork.
