  • 2 tablespoons olive oil
  • 1.5 pounds boneless skinless chicken breasts
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 2 4-ounce cans green chilies, canned
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 0.25 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 2 15-ounce cans great northern beans, drained and rinsed
  • 1 15-ounce can corn, drained
  • 8 ounces cream cheese, softened
  • 1 whole lime
  • 0.5 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chicken breasts and cook for 5-7 minutes on each side until browned and cooked through. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 4 minutes.

Stir in the canned green chilies, cumin, oregano, and cayenne pepper. Cook for 1-2 minutes until fragrant.

Pour in the chicken broth, and bring the mixture to a simmer.
