Ingredients

  • 3 large Parsnips
  • 4 medium Yukon Gold Potatoes
  • 3 tablespoons Unsalted Butter
  • 0.5 cup Heavy Cream
  • 1.5 cups White Cheddar Cheese (shredded)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground Black Pepper
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh Parsley (chopped, optional garnish)

Directions

Step 1

Peel and dice the parsnips and Yukon Gold potatoes into uniform, 1-inch pieces for even cooking.

Step 2

Fill a large pot with cold water and add the diced parsnips and potatoes. Add a pinch of salt to the water, then bring it to a boil over medium-high heat.

Step 3

Reduce the heat to medium and simmer the parsnips and potatoes for about 15-20 minutes, or until they are fork-tender.

Step 4

While the vegetables cook, heat a small saucepan over medium heat. Melt 2 tablespoons of the butter, then add the minced garlic. Cook for 1-2 minutes, stirring frequently, until fragrant. Remove from heat and set aside.
