In a large mixing bowl, combine ground beef, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat.
Place a sheet of parchment paper on a large cutting board, and spread the ground beef mixture evenly into a rectangle about 1/4 inch thick. Use a rolling pin for an even layer if needed.
Using a knife or pizza cutter, score the beef into 2x2-inch square patties (you should get about 12). Do not separate the squares yet.
Preheat a large skillet or griddle over medium-low heat. Add butter or coat the surface with non-stick cooking spray.
