Ingredients

  • 4 ounces Pancetta, diced

  • 2 medium Carrots, diced
  • 2 medium Celery stalks, diced
  • 3 cloves Garlic cloves, minced
  • 3 cups Canned white beans, drained and rinsed
  • 5 cups Chicken or vegetable stock
  • 2 Bay leaves
  • 2 Fresh thyme sprigs
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper, freshly ground
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced pancetta and cook until crispy, about 5 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the diced onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
