  • 1 teaspoon (or more to taste) kosher salt
  • 0.5 teaspoon black pepper
  • 0.25 cup heavy cream (optional)
  • 1 cup, jarred or homemade, chopped roasted red peppers
  • 1 tablespoon (for red pepper swirl) extra virgin olive oil

Directions

Step 1

In a large pot, heat olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic, celery, and carrot. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender.
