Ingredients

  • 1 cup canned white beans (such as cannellini or great northern), drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 tablespoons water (or more as needed)
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper, freshly ground
  • 0 optional garnish: extra rosemary, olive oil drizzle, or red pepper flakes

Directions

Step 1

Heat 1 tablespoon of olive oil in a small skillet over medium-low heat.

Step 2

Add the minced garlic and chopped rosemary. Sauté for 1-2 minutes, stirring frequently, until the garlic is fragrant but not browned. Remove from heat and let cool slightly.

Step 3

In a food processor, combine the drained and rinsed white beans, the garlic-rosemary mixture, lemon juice, remaining 2 tablespoons of olive oil, 2 tablespoons of water, kosher salt, and black pepper.

Step 4

Process the mixture until smooth and creamy. If the dip seems too thick, add more water, 1 tablespoon at a time, until it reaches your desired consistency.

Step 5

Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.

Step 6

Transfer the dip to a serving bowl. Garnish with an extra drizzle of olive oil, a sprinkle of chopped rosemary, or a pinch of red pepper flakes, if desired.

Step 7

Serve with crusty bread, fresh vegetables, or crackers. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
