  • 0.25 tsp Salt
  • 1 tbsp Shaved chocolate or cocoa powder (optional, for garnish)

Directions

Step 1

Place the dark chocolate in a heatproof bowl and melt it gently using a double boiler or in the microwave in 20-second increments, stirring each time until smooth. Let it cool slightly, but ensure it stays pourable.

Step 2

In a medium mixing bowl, whip the heavy cream with a hand mixer or whisk until soft peaks form. Be careful not to overwhip. Place the whipped cream in the refrigerator until ready to use.

In another clean mixing bowl, combine the egg whites and salt. Use a hand or stand mixer to whisk the egg whites at medium speed until they form soft peaks.
