Ingredients

  • 3 large sweet potatoes
  • 4 tablespoons butter
  • 0.25 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 2 medium apples (preferably Honeycrisp or Granny Smith)
  • 2 tablespoons brown sugar
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons water

Directions

Step 1

Peel and cube the sweet potatoes into roughly 1-inch pieces.

Step 2

Fill a large pot with water and bring to a boil. Add the sweet potato cubes and cook until tender, about 15-20 minutes. Drain and set aside.

Step 3

Peel, core, and slice the apples into thin wedges.

Step 4

In a skillet over medium heat, melt 2 tablespoons of butter. Add the apple slices, brown sugar, cinnamon, and nutmeg. Stir to coat the apples evenly.

Step 5

Add 2 tablespoons of water to the skillet, lower the heat, and cook the apples for 8-10 minutes until they are tender and caramelized. Set aside.

Step 6

In a large mixing bowl, combine the cooked sweet potatoes, the remaining 2 tablespoons of butter, heavy cream, salt, and cinnamon. Using a hand mixer or potato masher, whip the sweet potatoes until smooth and fluffy.

Step 7

Spoon the whipped sweet potatoes into a serving dish and top with the caramelized apples.

Step 8

Serve warm and enjoy!
