  • 2 pounds russet potatoes
  • 4 units celery stalks
  • 4 tablespoons unsalted butter
  • 0.5 cups heavy cream
  • 0.25 cups milk
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 units garlic cloves (minced)
  • 2 tablespoons fresh parsley (optional, chopped for garnish)

Directions

Step 1

Peel and cube the russet potatoes into evenly sized pieces (about 1 inch in diameter) and rinse them under cold water to remove excess starch.

Step 2

In a large pot, add the potato cubes and enough water to completely submerge them. Add 1/2 teaspoon of salt and bring the water to a boil over medium-high heat.

While the potatoes are boiling, wash the celery stalks and finely dice them into small pieces.

After 12-15 minutes of boiling, check the potatoes for tenderness by piercing a cube with a fork. If it slides off easily, the potatoes are ready. Drain the potatoes and set them aside.
